You may remember from my Five Days of Fall  series (Try it Edition) I mentioned making a hearty soup as one of the things to try now that Fall is here. Well, I did! See below for recipe!


 Ingredients
·         3-3.5 cups of peeled cut up potatoes
·        ¼ cup diced celery flakes
·        1/3 cup diced onion (I use frozen)
·        3 ¼ cup water
·        2 chicken bouillon cubes
·        ½ teaspoon salt
·        1 teaspoon pepper
·        5 tablespoon butter
·        5 tablespoons flour
·        2 cups milk
Directions
1.      Combine potatoes, celery flakes, onion, and water in a pot. Bring to a boil, and then cook over medium heat until potatoes are tender; about 10 to 15 minutes. Stir in bouillon cubes, salt and pepper.
 
2.    In a separate saucepan, melt the butter over medium-low heat. Whisk in flour with a fork, and cook stirring constantly until thick; for about 1 minute. Slowly stir in milk, stirring constantly (trying not to let lumps form) until thick; for about 4 to 5 minutes.
 
3.    Stir the milk mixture into the pot, and cook soup until heated through.
