You may remember
from my Five Days of Fall series (Try it Edition) I mentioned making a hearty soup as one of
the things to try now that Fall is here. Well, I did! See below for recipe!
Ingredients
·
3-3.5 cups of peeled cut up potatoes
·
¼
cup diced celery flakes
·
1/3
cup diced onion (I use frozen)
·
3
¼ cup water
·
2
chicken bouillon cubes
·
½
teaspoon salt
·
1
teaspoon pepper
·
5
tablespoon butter
·
5
tablespoons flour
·
2
cups milk
Directions
1. Combine potatoes, celery
flakes, onion, and water in a pot. Bring to a boil, and then cook over medium
heat until potatoes are tender; about 10 to 15 minutes. Stir in bouillon cubes,
salt and pepper.
2. In a separate saucepan,
melt the butter over medium-low heat. Whisk in flour with a fork, and cook stirring
constantly until thick; for about 1 minute. Slowly stir in milk, stirring
constantly (trying not to let lumps form) until thick; for about 4 to 5
minutes.
3. Stir the milk mixture
into the pot, and cook soup until heated through.
This sounds and looks delicious....just let me know when you'll be making it again and I'll gladly give it a try :-)
